For the past few months, I have wanted to recreate one of my favorite “vegan raw tuna” sandwiches from an Organic restaurant and market called “Erewhon” (pro-nounced “ear-one”) They currently have three locations; Calabasas, Los Angeles and Venice.
These vegan raw sandwiches go for about $6.50 each, so I wanted to make it at home for cheaper. These are a great staple to have on the go, foregoing any fast food or any unhealthy choices:)
I really liked how I recreated it and it was just to my liking.

Now to my recipe:
What you will need:
1 Organic Collard Leaf
A package of shredded Carrots (used just a small
Organic pea pods (I was able to find the strings)
3 handfuls of Natural Walnuts (this is enough for 2 sandwiches)
Half of Avocado (cut up half of the avocado into small cubes)
3 tbsp of Olive Oil
How to make:
Place the 3 handfuls of walnuts into the Food Processor. Add Olive Oil, depending on how you want your vegan tuna to be (more dry or moist). I then added some spices; Cayenne Pepper, No Salt Seasoning (Trader Joes), Curry, and a pinch of Sea Salt. We also added a local spice rub called “Cappy’s.” I then grounded up the walnuts with everything mixed together.
I then placed the washed Collard leaf on the plate. I added the pea pods, carrots and the vegan tuna, in that order. Then I added the avocado on top. Once that is completed, add a little parsley and you’re done.
This is so nutritous, healthy and brings great nourishment to my body.
