Eat With Us Recipe~Crispy Chickpeas written by eatmeetngreet Chickpeas…from baking them, using chickpea flour, to making hummus, & making them crispy, we have had chickpeas in many different forms. Lately, we have been craving chips and french fries, which aren’t not the best for us. So, I made Crispy Chickpeas. I did not however photograph the prepping of opening the cans and draining them into the strainer (which is what you want to do!) And then I thought to myself, OMG…I didn’t take any pictures of this part; oops!!! But yes, you want to open the cans, pour the chickpeas into a strainer and I take a paper towel and gently pat them dry them in the strainer and pour them onto a flat baking sheet. Next I add my favorite spices. I make them different every time, but this is the main way that my family and I like to eat them. I cannot have too much salt, which we don’t anyway, so I just sprinkled a pinch. We get enough flavor from the cracked black pepper, paprika and cayenne. Turn the oven on to 325 for about ten minutes. I then take a spatula and move some around because we like them extra crispy; almost like a popcorn texture. Ten minutes later, I move them again and turn the oven higher to 375. I then move the oven dial up to 425 for about 8 more minutes and voila, we have most of them extra crispy. I don’t add any extra oil because they have enough water even still, once they are drained. And then they are ready and wonderful to eat. It a great source of plant-based protein, they help with blood sugar levels, helps against heart disease and cancer, and the high concentrations of iron, potassium, copper and manganese are great for our bodies.
