I know, I know that a lot of us have eaten the cheap, affordable Ramen Noodles. Whether it is a cheap college staple or just some comfort soup, a lot of us have been there. I didn’t realize for awhile how deeply, unhealthy it was. I thought eh, it’s just soup, but it’s so much more than that!
So I wanted to make a healthier version for my family because this is something that I love and brings me fond memories of my college days in Boston.
Here is the recipe:
3 8oz cups of reverse osmosis water (I also added 1 cup of Vegetable stock)
I package of Organic Mushrooms
3 Zucchini Legs
3 packages of Shiritake Noodles
1 bush of Organic Scallions
2 tablespoons of Sea Salt
2 teaspoons of Old Bay Seasoning
1 teaspoon of Crushed Black Pepper
1/2 teaspoon Cayenne Pepper
What you will need:
Sliced Zucchini Legs
Drained shiritake noodles (they have water in the package when you purchase them)
How to make:
Boil water and vegetable stock for about 10 minutes
Add salt and old bay
Let boil for 20 minutes
Let sit for at least 10 minutes
And then serve.
